Basic Brownies

Eat them plain, sprinkled with powdered sugar, frosted or embellished with

any of the following toppings.  For more elaborate brownies, add a cup or two

of chocolate chips, or a cup of chopped maraschino cherries.

 

1 cup butter or margarine

2 cups sugar

3 eggs

1 tsp. vanilla extract

1/4 cup cocoa (rounded)

One and a half cups flour

1/4 tsp. salt

3/4 cup chopped nuts (optional)

 

Cream butter and sugar, beat in eggs and vanilla.  Add Cocoa, then flour, salt and nuts.

  Mix Well.  Spread into a greased 13 x 9 pan, pushing plenty of batter into the corners so

 brownies bake even.  Bake at 350 degrees approximately 30 minutes.  I always check the

middle with a toothpick to make sure it comes out batter free to ensure the brownies

 are baked thoroughly.

BAILEYS CHOCOLATE POKE CAKE

INGREDIENTS

2 cups  all purpose flour
2 cups  sugar
3/4 cup  natural unsweetened cocoa powder
2 tsp baking soda
1 tsp salt
2 large eggs
3/4 cup  milk
1 cup  vegetable oil
1 cup  Baileys Irish Cream, divided
1 tsp vanilla
3/4 cup  boiling water
1 cup  sweetened condensed milk
3/4 cup  semi sweet chocolate chips


WHIPPED CREAM TOPPING

2 cups  heavy whipping cream, cold
3/4 cup powdered sugar
1/4 cup  natural unsweetened cocoa powder
2 tbsp.  Baileys Irish Cream, optional
1/2 tsp vanilla extract

 

ADDITIONAL

Mini chocolate chips
Chocolate sauce

 


INSTRUCTIONS


Prepare a 9×13 inch cake pan by greasing the sides. Preheat oven to 300°F 
Add all dry ingredients to a large bowl and combine.
Add eggs, milk, vegetable oil, 1/2 cup of Irish cream and vanilla to the dry ingredients and mix well.
Slowly pour the water into the batter, mixing well and being careful of splashing.
Pour the batter into the cake pan and bake for about 40-45 minutes, or until a toothpick comes out with a few crumbs.
Remove the cake from the oven and poke holes all over. I use a knife sharpening rod, but you could also use a straw.
While the cake is still warm, add the chocolate chips to a medium sized bowl. Set aside.
Add the sweetened condensed milk and remaining 1/2 cup of Irish cream to a microwave safe measuring cup. Heat  the milk and cream until they begin to boil, then pour over the chocolate chips.
Whisk the chocolate until smooth, then immediately pour over the cake, spreading it into the holes. Don’t let the mixture sit before pouring it over the cake or it’ll start to thicken and not soak in the holes as well.
Set the cake in the fridge to cool and soak.
When the cake has cooled, add the ingredients for the whipped cream topping to a large mixer bowl. Whip on high speed until stiff peaks form.
Spread the whipped cream evenly over the cake. Top the cake with mini chocolate chips and a drizzle of chocolate sauce, if desired. Refrigerate until ready to serve.

PAVLOVA

Ingredients
Serves: 8 

  3 large egg whites
  2 tablespoon cold water
  1 cup (220g) caster sugar
  1 teaspoon cider vinegar
  1 teaspoon vanilla essence
  3 teaspoon cornflour

Directions
Preparation:15min  ›  Cook:45min  ›  Ready in:1hour 

  Preheat oven to 150 degrees C.
  Beat egg whites in a clean medium bowl with an electric mixer until stiff peaks form; beat in water. Gradually add sugar, beating between each addition until dissolved. Beat in vinegar, vanilla and cornflour.
  Pile onto a baking tray lined with baking paper. Spread out into a 22cm circle. Bake for 45 minutes. Turn off the oven and leave to cool with door ajar.

Note:
Take care not to open the oven door while your Pavlova is cooling

Topping

PUMPKIN SHEET CAKE

1 cup (2 sticks) unsalted butter, melted
1 cup milk
1/2 cup pureed plain pumpkin (canned plain pumpkin)
2 cups granulated sugar
2 large eggs
1 teaspoon vanilla extract
2 cups all purpose flour
1 teaspoon baking soda
1 teaspoon pumpkin pie spice
1/2 teaspoon salt


Cinnamon Cream Cheese Frosting:

1/2 cup (1 stick) unsalted butter
8 oz cream cheese
1/3 cup milk
1 teaspoon vanilla extract
1 teaspoon cinnamon
5 1/2 cups powdered sugar


Preheat oven to 350°F. Grease a 13 x 18 jelly roll pan with butter
In a large bowl, whisk together melted butter, milk, pumpkin and sugar. Whisk in eggs and vanilla extract. Then whisk in flour, baking soda, pumpkin pie spice and salt.
Pour batter into prepared jelly roll pan and bake for 20 minutes, or until a toothpick inserted in the center comes out clean.
Cinnamon Cream Cheese Frosting: in a large bowl cream butter and cream cheese until smooth. Beat in milk, vanilla extract and cinnamon on low speed until combined.
Then whisk in powered sugar – beating on high until frosting is smooth. Spread frosting on top of cake.
Refrigerate cake until ready to serve, and let cake set for 10 minutes before serving to let it warm tp room temp.

Peachy Praline Pie

Filling:

¾ cup sugar

¼ cup tapioca

4 cups sliced peaches

1 ½ tsp lemon juice

 

Mix filling ingredients.  Let sit 15 min.

 

Topping

1/3 cup brown sugar packed

¼ cup flour

½ cup chopped pecans

3 Tablespoons butter

 

Mix topping ingredients, mixing in butter til crumbly.  Sprinkle 1/3 mixture on bottom of unbaked 9” pie shell.  Cover with peaches.  Top with remaining mixture.

 

Bake 400 about 40 minutes.

DIRT CAKE

8oz cream cheese, softened 
1/4 cup butter 
1 cup powdered sugar 
3 cups milk 
2 sm boxes instant vanilla pudding 
1/2 tsp vanilla 
12 oz Cool Whip, thawed

Cream together cream cheese, butter & powered sugar & vanilla. In separate bowl mix milk & pudding chill until set. Fold in cool whip after pudding has set. Add cream cheese mixture, layer with Oreos... Chill until ready to serve!

Reese's Fudge

Ingredients

 

1 cup butter , melted
1 pound powdered sugar
1 1/2 cup creamy peanut butter
1 1/2 cup graham cracker crumbs (about 1 package)


Topping
1 (12 oz) package milk chocolate chips
1 1/2 cup creamy peanut butter


Instructions
In a large bowl mix together all of the ingredients for the peanut butter layer. Use a large fork to blend well. Press into 13x9 inch baking pan. Chill for 1 hour.
Place chocolate chips and peanut butter into a bowl. Microwave for 1 minute. Stir until melted and smooth. Pour over peanut butter layer. Chill for 2 hours, until firm.
Store in fridge.

Bake 20-25 minutes at 350 degrees
Check at 20 mins

Icing

1/4 cup softened butter
¼ cup can milk (regular milk is fine)
1/4 cup cocoa
3 cups powdered sugar
dash salt
Mix together & frost Brownies.

Base:
3 cups flour
1/4 teaspoon salt
1 cup sugar
4 teaspoons baking powder
1 1/2 cups milk
2 eggs
2 teaspoons vanilla
1/2 cup butter, melted
Topping:
1 cup butter, softened
1 cup brown sugar
2 tablespoons flour
1 tablespoon cinnamon
Glaze:
2 cups powdered sugar
5 tablespoons milk
1 teaspoon vanilla
DIRECTIONS:
Preheat oven to 350F. Prepare a 9 x 13 baking pan (buttered).
Mix all of the base ingredients together, with the exception of the butter. Add the melted butter last, and then pour into your prepared pan,
Mix all of the topping ingredients together in a separate bowl. Mix well. Drop by teaspoonful over the base, as evenly as you can over the entire base. Take a butter knife and swirl the topping into the base. Pop into the oven and bake for 28-30 minutes.
While the cake is baking, prepare the glaze and set aside.
Remove from oven and glaze the cake while still warm.

Strawberry Punch Bowl Cake

1 yellow cake mix
1 (6 oz.) pkg. instant vanilla pudding
1 lg. can crushed pineapple, drained
2 (10 oz.) pkgs. frozen strawberries
2 bananas
1 (16 oz.) carton Cool Whip


Bake cake in two round cake pans and set aside to cool. Make pudding and set in refrigerator to get cold. Cut one layer of cake in small chunks; put in punch bowl. Spread half of pudding on top; then add half of pineapple and one package strawberries. Slice one banana on top; half of Cool Whip, spreading to cover completely. Repeat with the other layer the same - ending with Cool Whip. Let set in refrigerator overnight
